Easy Cowboy Caviar

A vibrant dish packed with fresh vegetables, legumes, and a zesty lime dressing, perfect for gatherings or as a healthy snack.

Ingredients

  • 2 diced bell peppers (red, yellow, or orange)
  • 1/2 large red onion (diced)
  • 2 medium cucumbers (diced)
  • 15 cherry tomatoes (sliced)
  • 2 red or green jalapeños (diced, seeds removed for less heat)
  • 4 ears of corn (cut off the cob)
  • 1 large handful of fresh cilantro (chopped)
  • 1 can chickpeas (drained and rinsed)
  • 1 can black beans (drained and rinsed)
  • 1 cup feta cheese
  • 2 large limes (juiced)
  • 1/4 cup olive oil
  • 2 tsp pink salt or sea salt
  • 1 tsp black pepper
  • 2 tbsp apple cider vinegar
  • 2 tsp honey

Instructions

  1. Dice the bell peppers into small chunks and place them in a large bowl.
  2. Dice the cucumbers and red onion, and add them to the bowl.
  3. Slice the cherry tomatoes into small pieces and throw them in as well.
  4. Chop the jalapeños into small pieces and add them. Remember to remove the seeds if you want less heat.
  5. Cut the corn off the cob and mix it into the bowl.
  6. Chop the cilantro finely and add it to the mix.
  7. Drain and rinse the chickpeas and black beans, then add them to the bowl.
  8. Add in the feta.
  9. Mix together the lime juice, olive oil, pink salt, black pepper, apple cider vinegar, and honey in a small bowl to create the dressing.
  10. Pour the dressing over the cowboy caviar and mix well.

Notes

Let the cowboy caviar sit for at least 30 minutes to meld flavors. Store leftovers in an airtight container in the fridge for up to 3 days.
