1 tablespoon avocado oil
1 tablespoon sesame oil
2 cloves garlic, minced
1 teaspoon minced ginger
3 tablespoons dark soy sauce
3 tablespoons honey
2 chicken breasts, cut into bite-sized pieces
1 red bell pepper, chopped into chunks
1 onion, sliced into squares
1 tablespoon sesame seeds
Fresh coriander or cilantro, roughly torn
Optional chili flakes
Optional rice or potatoes for serving
1. In a small bowl, whisk together avocado oil, sesame oil, garlic, ginger, soy sauce, and honey.
2. Place the chicken pieces into a bowl and pour over three-quarters of the marinade.
3. Reserve the remaining marinade for brushing during cooking.
4. Cover and refrigerate the chicken for at least 1 hour or overnight for more flavor.
5. If using wooden skewers, soak them in water for at least 30 minutes.
