A refreshing and creamy no-bake dessert featuring layers of lemon and blueberry flavors, perfect for any occasion.

Ingredients

  • 3 cups graham cracker crumbs
  • 3/4 cup butter, melted
  • 28 oz. pkg. cream cheese, room temperature
  • 1 cup granulated sugar
  • 1/3 cup lemon juice
  • 1 cup 2% milk
  • 3.4 oz. box instant lemon pudding
  • 21 oz. can blueberry pie filling
  • 16 oz. tub frozen whipped topping, thawed

Instructions

  1. Mix the graham cracker crumbs with the melted butter in a medium bowl.
  2. Set aside 1/2 cup of the crumb mixture for optional topping.
  3. Press the remaining crumbs firmly into the bottom of a 13 x 9 dish to form a crust.
  4. Place the dish in the refrigerator to let the crust set while you prepare the next layer.
  5. Beat the cream cheese and granulated sugar together until the mixture is light and fluffy.
  6. Slowly add the lemon juice and milk to the cream cheese and sugar mixture, mixing thoroughly until well combined.
  7. Add the dry lemon pudding mix and beat until well mixed; the batter will be thick.
  8. Drop spoonfuls of the lemon mixture onto the prepared crust and spread it into an even layer.
  9. Take the blueberry pie filling and drop spoonfuls on top of the lemon layer, gently spreading it.
  10. Spread the thawed whipped topping over the blueberry layer and sprinkle with reserved graham cracker crumbs if desired.
  11. Chill in the refrigerator for at least 2 hours before serving.

Notes

Serve chilled and garnish with mint or additional blueberries if desired. This dessert can be made a day ahead of time.
