1 1/2 pounds boneless skinless chicken breasts
3 bell peppers (green, yellow, and red)
1 yellow onion
2 cloves garlic
3 Tablespoons olive oil
2 Tablespoons fajita seasoning
1/4 teaspoon cayenne pepper (optional)

Instructions

Preheat oven to 400°F (200°C)
Place a large sheet pan in the oven to preheat
Slice chicken into 1/2-inch strips against the grain
Cored and slice bell peppers and onion
In a bowl, combine chicken, peppers, onions, garlic, olive oil, fajita seasoning, and cayenne (if using)
Remove hot sheet pan from oven
Pour mixture onto the pan, spreading into an even layer
Roast for 20 minutes or until chicken is cooked through and vegetables are caramelized
