A vibrant and flavorful pasta salad that’s perfect as a side dish or light meal, packed with fresh veggies and feta cheese.

  • 1 box (12 oz) tricolor rotini pasta
  • 1 cup chopped cucumber (peeled and seeded, about 1 cucumber)
  • 1 cup halved cherry or grape tomatoes
  • 1 cup crumbled feta cheese
  • 1 can (2.25 oz) sliced black olives (drained)
  • 1/4 cup finely diced red onion
  • 1/21 cup Italian salad dressing

Instructions

  1. Cook the pasta: Start by bringing a large pot of water to a boil. Add 1-2 teaspoons of salt. Once boiling, add the rotini pasta and cook according to the box instructions until al dente.
  2. Cool the pasta: Drain the pasta in a colander and rinse under cold water to stop cooking and cool it down.
  3. Prepare the ingredients: In a large mixing bowl, combine the cooled pasta, chopped cucumber, halved tomatoes, crumbled feta, drained black olives, and diced red onion.
  4. Add the dressing: Pour Italian salad dressing over the mixture, starting with 1/2 cup, and gently stir to combine. Reserve some dressing for later if needed.
  5. Refrigerate: Serve immediately or let chill in the refrigerator for 2-4 hours before serving to enhance the flavors.
