A vibrant and refreshing spring salad with tender greens, crisp vegetables, creamy goat cheese, and crunchy sunflower seeds, tossed in a bright homemade vinaigrette for a simple, satisfying side dish.

Ingredients

Spring Mix (1 package, about 5 oz)
Cherry Tomatoes (1 cup, halved)
Cucumber (1 medium, sliced or diced)
Radishes (2-3 small, thinly sliced)
Red Onion (1/2, thinly sliced and soaked)
Goat Cheese, crumbled (1/2 cup)
Sunflower Seeds (1/2 cup, raw or roasted, unsalted)
Extra Virgin Olive Oil (1/4 cup)
Balsamic Vinegar (3 tablespoons)
Fresh Lemon Juice (2 tablespoons)
Garlic (1 clove, minced)
Kosher Salt (1 teaspoon)
Black Pepper (1/2 teaspoon)

Instructions

Combine balsamic vinegar, lemon juice, minced garlic, salt, and pepper in a small bowl.
Whisk until the salt dissolves completely.
Gradually pour in olive oil while whisking to emulsify the dressing.
In a bowl, slice red onion thinly, soak in cold water for 10 minutes, then drain and pat dry.
In a large bowl, toss spring mix, cherry tomatoes, cucumber, radishes, and soaked red onion with the dressing.
Sprinkle crumbled goat cheese and sunflower seeds on top just before serving.

Notes

Use pre-washed spring mix for convenience.
Replace goat cheese with crumbled feta as a substitute.
