  • 2 Tablespoons fresh lime juice

  • 2/3 cup crumbled feta cheese

Instructions

  1. Prepare the Balsamic Syrup: In a small saucepan set over medium-high heat, combine the balsamic vinegar and sugar. Bring the mixture to a boil and keep cooking it, scraping down the sides as necessary. Reduce to a syrup-like consistency, taking about 5 minutes. Set aside to cool.
  2. Cut the Watermelon: While the syrup cools, cut the watermelon into cubes or use a melon baller. Place in a large mixing bowl.
  3. Make the Dressing: In a small bowl, whisk together lime juice and olive oil. Add salt and pepper to taste.
