A fun and festive dessert that combines a sweet cookie crust with a creamy topping and colorful fresh fruits, perfect for summer celebrations.

  • 1 teaspoon baking powder
  • 1/4 teaspoon salt (or 1/2 teaspoon fine Himalayan pink salt)
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 teaspoons lemon zest
  • 1 1/2 teaspoons lemon extract
  • 1 large egg, room temperature
  • 8 oz cream cheese, room temperature
  • 1 1/3 cups powdered sugar
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1/3 cup heavy cream, cold
  • 1 pound strawberries
  • 6 oz blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  2. Mix together the flour, baking powder, and salt in a bowl.
  3. Cream the softened butter and granulated sugar until light and fluffy in another bowl.
  4. Add the lemon zest, lemon extract, and egg, mixing well.
  5. Combine the flour mixture with the wet ingredients until a dough forms.
  6. Spread the dough onto the prepared baking sheet to form a pizza shape and bake for about 12-15 minutes until lightly golden.
  7. Let it cool completely.
  8. Beat the cream cheese until smooth, then gradually add the powdered sugar, vanilla extract, and a pinch of salt.
  9. Whip the heavy cream until stiff peaks form in another bowl, then gently fold into the cream cheese mixture.
  10. Spread the cream cheese topping evenly over the cooled crust.
  11. Arrange strawberries and blueberries on top in a festive pattern.

Notes

Ensure your cream cheese is at room temperature to avoid lumps. For a gluten-free version, use a gluten-free flour blend. Store leftovers in an airtight container in the refrigerator for up to 3 days.
