2 cups heavy whipping cream

1 1/2 cups powdered sugar, divided

1 tablespoon fresh lemon juice

2 teaspoons vanilla extract

Optional cherry pie filling

Optional blueberry pie filling

Optional strawberry sauce

Optional chocolate ganache

Optional Oreo crumbs

Optional chopped candies

Instructions

1. Add graham cracker crumbs to the bottom of serving cups or dessert jars.

2. Use about 2 tablespoons of crumbs for large cups or 1 tablespoon for smaller cups.

3. Place a metal or glass mixing bowl in the freezer for 15 minutes.

4. In another mixing bowl, beat cream cheese and 1 cup powdered sugar until smooth and creamy.

5. Remove the chilled bowl from the freezer.

6. Add heavy whipping cream, remaining powdered sugar, lemon juice, and vanilla extract to the chilled bowl.

7. Beat the whipping cream mixture until stiff peaks form.

8. Add the cream cheese mixture to the whipped cream mixture.

9. Mix on low speed until fully combined and smooth.

10. Transfer the cheesecake filling into a piping bag or zip-top bag with the corner cut off.

11. Pipe the cheesecake filling into the prepared cups until about 3/4 full.

12. Refrigerate the cheesecake cups for 1 to 2 hours or until chilled and set.

13. Top with your favorite cheesecake toppings before serving.

Notes

Use room temperature cream cheese for the smoothest filling texture.

Chilling the mixing bowl helps the whipping cream whip faster and hold stiff peaks.

Do not overmix after combining the whipped cream and cream cheese mixture.

Cheesecake cups can be prepared the night before serving.

Store covered in the refrigerator for up to 3 days.

Try different flavor variations by mixing chocolate, fruit puree, or cookie crumbs into the filling.
