Ingredients

1/4 cup olive oil

1/4 cup lemon juice

Zest of 1 lemon

2 to 3 garlic cloves, crushed

2 teaspoons fresh thyme

2 teaspoons rosemary

1 teaspoon dried oregano

1 teaspoon salt

1 teaspoon black pepper

4 large chicken breasts, skinless and boneless

Wooden skewers, soaked in water

Optional bell peppers

Optional onions

Optional zucchini

Optional tzatziki sauce for serving

Instructions

1. In a large bowl, combine olive oil, lemon juice, lemon zest, garlic, thyme, rosemary, oregano, salt, and black pepper.

2. Cut the chicken breasts into bite-sized chunks.

3. Add the chicken pieces to the marinade and toss well to coat evenly.

4. Cover and refrigerate for at least 30 minutes or up to 24 hours for more flavor.

5. If using wooden skewers, soak them in water for at least 30 minutes before grilling.

6. Thread the marinated chicken onto the skewers, alternating with vegetables if desired.

7. Preheat an outdoor grill or grill pan over medium-high heat.

8. Place the skewers on the grill and cook for 10 to 15 minutes.

9. Turn the skewers every few minutes until the chicken is golden brown and fully cooked.

10. Remove the skewers from the grill and let them rest for 5 minutes before serving.

11. Serve warm with salad, rice, grilled vegetables, or dipping sauces.

Marinating the chicken overnight creates even deeper flavor.

Soaking wooden skewers helps prevent burning while grilling.

Add vegetables like bell peppers, onions, or zucchini for extra color and nutrition.
